Extraction of starch from frozen potato whole-tissues using cellulase and its physicochemical properties (셀룰로오스분해효소에 의한 동결감자로부터 전분의 추출 및 물리화학적 특성)

  • This study investigated the impact of cellulase treatment on the extraction yield of potato starch (PS), and compared the physicochemical properties of PS by conventional (CSE) and enzymatic (ESE) starch extraction. In ESE, the PS extraction yield was predominantly influenced by reaction temperature, time and their interaction, compared to the cellulase concentration. When potatoes were treated for 8 h at $40^{\circ}C$ with 1.5% cellulase, the PS extraction yield was about 3.4-fold higher than that by CSE. Compared to CSE-PS, ESE-PS showed lower total starch contents and higher amylose contents, resulting in lower swelling factors and distorted pasting viscosity profiles accompanied by absence of peak and breakdown viscosities. However, ESE did not affect the gelatinization characteristics of PS. Overall results suggested that ESE can provide the highest yield of PS, and ESE-PS can be a potential starch source for extending the utilization of PS in food industries.

  • 감자전분의 수분함량에 따라 가열하는 동안 전분의 점탄성 성질의 변화를 조사한 결과 전분의 농도가 증가할수록 더 높은 storage modulus (G#)와 loss modulus (G@) 값을 보여주었으며, 호화개시온도 및 호화최대값을 나타내는 온도는 전분농도에 따라 낮은 온도로의 이전을 보여주었다. 20%의 감자전분과 옥수수전분을 비교한 결과, 옥수수전분은 $68^{\circ}C$, 감자전분은 $60^{\circ}C$에서의 호화개시온도를 나타내었으나, G#와 G@값은 옥수수전분이 높게 나타났고 이와 같이 서로 다른 호화개시온도, 호화정도 및 그 최대값을 나타내는 온도변화는 아밀로즈/아밀로팩틴의 함량과 전분 입자의 크기에 따른 것으로 여겨진다. 감자와 옥수수 전분을 각각 3%씩 첨가하여 만든 생선단백질 젤의 파손강도를 측정한 결과 전분들을 첨가한 단백질 젤이 무첨가한 젤보다 더 강하게 나타났으며, 옥수수 전분의 첨가가 감자전분 첨가보다 더 강한 젤의 강도를 나타내었다 혼합비를 달리 첨가하여 만든 겔을 응력완화현상을 측정한 결과 감자 및 옥수수 전분을 첨가한 경우는 초기순간응력, 평형응력 뿐만 아니라 전체적인 응력의 증가현상이 일어났으나 3요소 일반화된 Maxwell 모형으로 분석한 결과는 감자 전분과 옥수수전분에 의한 탄성을 (elastic modulus) 상승효과는 첨가농도의 의존성을 보여 주었다.

Physicochemical Properties of Crosslinked Potato Starch (가교결합 감자 전분의 이화학적 특성)

  • Crosslinked potato starches (XP), from 2,400 to 1,900 anhydroglucose units per crosslinked (AGU/CL), were prepared by reacting with epichlorohydrin. Some of the physicochemical properties of the XPs were then compared with those of native potato and cowpea starches. Crosslinking decreased moisture, protein and ash contents but had no effect on phosphorus content. Water binding capacities of the XPs increased as the degree of crosslinking increased, and that of the XP with 2,100 AGU/CL approached the value of cowpea starch. The absorption maxima of the starch-iodine complex shifted from 594 to 580 nm. Granule size increased slightly and surface appearance of the granule became rough when crosslinked. Both native and crosslinked potato starches showed B type X-ray diffraction pattern, and the relative crystallinity was not affected by crosslinking. Gelatinization temperature and the heat of gelatinization, measured by differential scanning calorimeter (DSC), did not change within the range of crosslinking tested. From X-ray and DSC data, it was concluded that the crosslinking ocurred in the amorphous region of the starch granule.

Effect of Starches on Texture and Sensory Properties of Frozen Noodle (전분 첨가 냉동면의 조직감과 관능적 특성)

  • In an attempt to evaluate the effect of six starch sources-potato starch acetate, corn starch acetate, waxy corn starch, corn starch, potato starch, and wheat starch on properties of frozen noodle, amylograph characteristics of starch-wheat flour composites, cooking quality, maximum cutting force and sensory properties of cooked frozen noodles were examined. Compared with 100% wheat flour as control, potato starch acetate and potato starch-wheat flour composites had slightly lower initial pasting temperature and wheat flour composites with acetylated starches, waxy corn starch and potato starch had slightly higher maximum peak viscosity. At cooking quality examination of noodles made from wheat flour-starch composites, volume and weight of cooked noodles were increased and cook loss was decreased with the addition of acetylated starches and waxy corn starch. Maximum cutting forces of cooked frozen noodles containing more than 15% of potato starch acetate and only 15% of corn starch acetate were higher than that of control. Other starches except potato starch improved sensory properties of cooked frozen noodles and the greatest positive effect was acetated potato starch.

Quality Characteristics of Brown Rice Dasik using Modified Potato Starch (감자 변성 전분 배합 비율에 따른 현미다식의 품질 특성)

  • The principal objective of this study was to evaluate the physicochemical characteristics of brown rice Dasik prepared with different 5 levels(0, 25, 50, 75, 100%) of modified potato starch powder. We assessed the general compositions, Hunter's color values, the mechanical characteristics, and conducted a sensory evaluation analysis of brown rice Dasik at room temperature($20^{\circ}C$). The more modified potato starch powder composition was increased, the content of ash, protein and fat were significantly decreased(p<0.05). We noted that the luminance of samples were increased the more modified potato starch powder composition was increased, but in Hunter's a and b values were decreased. With regard to the mechanical properties of the Dasik samples, we noted significant differences in hardness, gumminess, chewiness but no differences in springiness, cohesiveness and adhesiveness were detected. The more modified potato starch powder composition was increased, the more the score of hardness, gumminess and chewiness were higher. The results of sensory evaluation showed that there were significant differences on the color, sweetness, mouth-feel, chewiness, overall quality of the Dasik samples(p<0.05). The score of brown rice Dasik with 50%(w/w) modified potato starch(BM2) in color, mouth-feel, chewiness, overall quality were significantly increased than those of other samples.

The retrogradation and swelling power of modified potato starches (변성 감자 전분의 노화와 팽윤력)

  • Hydroxypropylated starches and acetylated starches were prepared by reaction of potato starch with propylene oxide and acetic anhydride, respectively and then degree of retrogradation and swelling power were investigated in different pHs and temperature. The extent of retrogradation determined by glucoamylase method during freeze-thaw treatment and storage in low temperature $(0{\sim}5^{\circ}C)$ showed that modified potato starches were slowly retrograded as the increase of degree of substitution. The order of the retrogradation tendencies in different pHs were pH 4>pH 6>pH 8>pH 10. Retrogradation of hydroxypropylated potato starches were less than that of acetylated potato starches. Swelling power of starches were influenced more by the temperature than by the pH. The order of the swelling power tendencies in different pHs were pH 10>pH 2>pH 8>pH 4>pH 6.

Mechanical Properties and Degradability of Degradable Polyethylene Films Containing Crosslinked Potato Starch (가교결합 감자 전분을 함유한 분해성 polyethylene 필름의 기계적 성질 및 분해 특성)

  • Potato starches were crosslinked with 0.1, 0.5, 1.0, and 2.0% epichlorohydrin. Starch/polyethylene(PE) cast films were prepared to contain 5% of the crosslinked potato starch. Mechanical properties and degradability of these films were measured and compared to those of the films containing native potato starch. Mechanical strength of the films containing crosslinked potato starch was higher than that of the film containing native starch. Thermal degradability measured by a FT-IR and an Instron showed that crosslinked starch/PE films degraded faster than native starch/PE films. Biodegradability of the starch/PE films was accelerated by the addition of crosslinked starch to the PE films.

Determination of Degree of Gelatinization of Various Potato Starches (품종별 감자 전분의 호화도 측정)

  • Gelatinization properties of potato starches from Irish Cobbler (the dry type), Shepody and Superior (the intermediate type) and Dejima (the moist type) were investigated. The minimum moisture contents for gelatinization of starches was 45%. When the moisture contents percentage was $45{\sim}60%$, the degree of gelatinization of potato starches was higher in Dejima than in Irish Cobbler, on the other when it was 70%, all of kind were almost similar. The gelatinization temperature of starches was $65^{\circ}C$, When the temperature was $65^{\circ}C$, degree of gelatinization was highest in Dejima and lowest in Irish Cobbler, on the other hand when it was $75^{\circ}C$. highest in Irish Cobbler and lowest in Shepody.

Rheological Properties of Cross-Linked Potato Starch (가교화 감자전분의 유변학적 특성)

  • The objective of the present study was to investigate the rheological properties of potato starch cross-linked with different concentrations (0, 0.125, 0.25, and 0.5%, w/v) of cross-linking agents (10 g of adipic acid and 40 g of acetic anhydride). Cross-linked potato starch dispersions showed shear-thinning behaviors (n=0.43~0.63) at $25^{\circ}C$. Apparent viscosity (${\eta}_{a,100}$), consistency index (K), and yield stress (${\sigma}_{oc}$) significantly increased with an increase in the concentrations of cross-linking agents from 0.125 to 0.5% (w/v). Storage modulus (G') and loss modulus (G'') increased, whereas complex viscosity (${\eta}^*$) was reduced with increasing frequency (${\omega}$) from 0.63 to 62.8 rad/s. Magnitudes of G' and G'' for cross-linked potato starch were significantly increased with an elevation in the concentrations of cross-linking agents. G' values of cross-linked potato starches were significantly higher than G'', indicating that the starches had more elastic properties than viscous properties. Cox-Merz rule was not applicable to potato starch dispersions.

Physicochemical, structural, pasting, and rheological properties of potato starch isolated from different cultivars (품종별 감자전분의 이화학적, 구조적, 페이스팅 및 유변학적 특성)

  • The objective of this research was to elucidate the physicochemical, structural, pasting and rheological properties of potato starch isolated from a foreign potato cultivar ('Atlantic') and new domestic potato cultivars ('Goun', 'Sebong', and 'Jinsun'). Scanning electron microscopy (SEM), X-ray diffraction (XRD), Fourier transform infrared spectroscopy (FT-IR), and one-dimensional nuclear magnetic resonance (1D NMR) showed that the structural properties of potato starch did not vary significantly with cultivars. RVA analysis demonstrated that the 'Atlantic' starch had the highest breakdown viscosity among all potato starches. In steady shear rheological analysis, all potato starch dispersions showed shear-thinning behaviors (n =0.63-0.72) at $25^{\circ}C$. The highest apparent viscosity (${\eta}_{a,5}$), consistency index (K), and yield stress (${\sigma}_{oc}$) were observed in the 'Goun' starch dispersion. In dynamic shear rheological analysis, storage modulus (G') and loss modulus (G") values of new domestic potato starch dispersions were higher than those of the 'Atlantic' starch dispersion.
