Influence of Hexaconazole on Biochemical Constituents of Groundnut (땅콩의 생화학성분에 미치는 Hexaconazole의 영향)

  • In this study, hexaconazole 5% SC, an ergosterol biosynthesis inhibitor, was tested on groundnut with its recommended ($500\;mL\;ha^{-1}$) and higher ($2,000\;mL\;ha^{-1}$) concentrations under greenhouse conditions in India. Its influence on biochemical constituents of groundnut plants was assessed apart from its disease management potential against late leaf spot caused by Phaeoisariopsis personata (Berk and Curt). Likewise, leaf samples were collected from hexaconazole 5% SC-sprayed plants at different time intervals. Thereafter, their analyses showed considerable differences in the plant constituents, such as chlorophyll, soluble protein, and total phenol contents and the activity of nitrate reductase enzyme. The induction activity of defense-related enzyme, peroxidase, was also analyzed. However, no difference was observed in the isozymic pattern. Moreover, the ground kernels collected from treated plants also showed no difference in the estimated carbohydrate and other constituents.

  • This study was carried out to obtain a basic information for the improvement of human health and the development of variety through the analysis of inorganic compounds. contents of amino acids and polysaccarides on three elephant foods, Amorphophallus konjac, collected from Kumsan, Japan and China. The contents of mannan as a carbohydrate of a major component in an elephant food was slightly high in Kumsan than that of Japan and China variety. Degree of VIscosity of an elephant food depends upon the contents of soluble free sugars and amino acids contents of these free sugars were high in the order of Japan, China and Kumsan variety. The analytical results on inorganic compounds in an elephant food were shown as follows; The contents of potasium, phosphate and ferrin of Kumsan variety were shown to be higher than those of China and Japan, while sodium and caleium were appeared to be highter in China chip

The Molecular Weight Distribution Pattern in Oxidized Corn Starch (산화에 따른 옥수수 전분의 분자량 분포 양상)

  • Corn starch was modified by the oxidation with sodium hypochlorite(NaOCl) and the changes in the distribution of molecular weight were examined. Corn starch was oxidized with 0.25, 0.5, 0.75, 1.0, and 1.5% active Cl/g of starch at pH 7.0 and 25$^{\circ}C$ for 10 min. Oxidation of corn starch caused a change in the molecular weight distribution of amylopectin. The fraction of highest molecular weight in native starch decreased gradually and the fraction of lower molecular weight increased with increasing oxidation. Also, λ$\sub$max/ and iodine binding capacities of oxidized starches decreased and the soluble carbohydrate content increased by oxidation. The differential scanning calorimetric results of oxidized starches showed that the temperature and enthalpies of gelatinization were not changed by oxidation; however, the more the starch was oxidized, the greater the extent of retrogradation.

  • It has been made clear that there exist a definite rhythm in the accumulative process of carbohydrates of soybeans, and that there is a great variation in nitrogen metabolism. In spite of earlier or later manuring, it is possible to make use of the above stated conclusion. But in the case of later manuring, there is so short a time of growth before harvest, resulting in the lack of normal growth and in a great effect upon harvest. In the general terms, the first half period of growth may be called that of nitrogen assimilation, and the late half, that of carbohydrate assimilation. It has delayed comparatively distinction between these periods whether manuring was done earlier or later. In other words, the lack of carbohydrates in the first half period of growth has been found to deter the process of protein synthesis. And the lack of protein in a body in the latter half period of growth has been found to weaken photosynthesis that should be active, resulting in the decrease of harvest. Consequently, lack of protein in the body during the period of pod adhesion definitely brought about lack of growth in the latter period of growth. It follows, therefore, that in order to increase harvest, it is necessary to manure comparatively in the early period, and that contents of various forms of nitrogen.

Quality Properties of Tea Extracts Prepared with Persimmon Flowers (감꽃 침출차의 품질 특성)

  • The chemical components of flesh persimmon flowers (petal and calyx), and the qualify of hot-water extracts (teas) prepared from powders of these flower parts, were investigated In flesh petal and calyx, the contents of moisture, crude protein, crude lipid, and carbohydrate were 84.8% 0.4% 0.3% and 13.7% respectively. The values were not significantly different when the two tissues were compared. In petal and calyx respectively, the crude ash values were 0.5% and 1.1% of flesh weights, the vitamin C content were 192.3mg% and 392.7ng%, the flavonoid levels were 98.4 mg% and 355.2mg% and the carotenoid content were 0.8mg% and 3.8mg%. Hot air and freeze drying methods applied to petals, prior to powder preparation, did not affect the levels of soluble solids or soluble annins. Extract from calyx had higher L values, higher ${-\alpha}$ values, more soluble tannins, greater 1,1-diphenyl-2-picrylhy-drazylradical-scavenging activities, me lower pH values, than did exracts from petal. Fructose and glucose were higher in petal extract than in calyx extract, but sucrose was higher in calyx extracts. Extract of freeze-dried powdered petals had significantly higher free sugar levels than did exracts from petals dried with hot air. The major organic acids in extracts were citric acid, oxalic acid, and malic acid. The levels of organic acids were inversely related to free sugar levels in all flower parts and after all drying methods tested. Sensory tests of aroma, taste and overall acceptability yielded scores above medium for all teas, regardless of the flower part powdered, or the drying method used. The results show that the petal and calyx of persimmon may be used to make tea and perhaps other foods.

Production of Fructose 6-Phoschate from Starch Using Thermostable Enzymes (내열성 효소를 이용한 전분으로부터 6-인산과당의 제조)

  • Phosphosugars are found in all living organisms and are commercially valuable compounds with possible applications in the development of a wide range of specialty chemicals and medicines. In carbohydrate metabolism, fructose 6-phosphate (F6P) is an essential intermediate formed by phosphorylation of 6' position of fructose in glycolysis, gluconeogenesis, pentose phosphate pathway and Calvin cycle. In glycolysis, F6P lies within the glycolysis metabolic pathway and is produced by isomerisation of glucose 6-phosphate. For large-scale production, F6P could be produced from starch using many enzymes such as pullulanase, starch phosphorylase, isomerase and mutase. In enzymatic reactions carried out at high temperatures, the solubility of starch is increased and microbial contamination is minimized. Thus, thermophile-derived enzymes are preferred over mesophile-derived enzymes for industrial applications using starch. Recently, we reported the production of glucose 1-phosphate (G1P) from starch by Thermus caldophilus GK24 enzymes. Here we report the production of F6P from starch through three steps; from starch to glucose 1-phosphate (glucan phosphorylase, GP), then glucose 6-phosphate (phosphoglucomutase, GM) and then F6P (phosphoglucoisomerase, GI). Using 200 L of 1.2% soluble starch solution in potassium phosphate buffer, 1,253 g of G1P were produced. Then, 30% yields of F6P were attained at the optimum reaction conditions of GM : G1 (1 : 2.3), 63.5$^{\circ}C$, and pH 6.85. The optimum conditions were found by response surface methodology and the theoretical values were confirmed by the experiments. The optimum starch concentrations were 20 g/L under the given conditions.

Physico-Chemical Characteristics of Components and Their Effects on Freezing Point Depression of Garlic Bulbs (마늘의 성분조성(成分組成)과 내한성(耐寒性) 연구(硏究))

  • The effect of physicochemical characteristics on the freezing point depression of garlic bulb was studied to examine the reasons of cryoprotectivity in garlic bulb stored at subzero temperature. The composition of fresh garlic was characterized by having high soluble solids($40^{\circ}$ Brix; 90% on dry basis), comparing with $10^{\circ}$ Brix in case of other fruits and vegetables. Soluble solids were composed of 70% sugars, 20% protein, and 10% insoluble solids(including 3% of ash, 3% of crude fiber, and 4% of fat). The main component of sugars in garlic was fructosan with 1-29 degree of polymerization(D.P) and the fructosan of 4-5 D.P was over 50% of total fructosan. Freezing point of garlic bulb, which is a parameter of cryoprotectivity, was depressed as the concentration of soluble solids increased, and as the D.P value decreased in the same concentration of soluble solids.

Development of Teas from Leaves of Korean Box thorn (Lycium chinense Miller) Leaves (구기엽을 이용한 차류의 개발)

  • Six different types of teas from box thorn leaves collected on mid May were prepared by using different tea making procedures. The selected physicochemical propentes and the sensory qualities of the 6 different teas were analyzed. The box thorn leaves contained 87.71% moisture, 0.69% crude fat, 4.77% crude protein, 2.13% fibers, 3.11% carbohydrates and 1.59% ash. Based on the sensory analysis, roasted tea(duckum tea) had the highest values in taste, flavor, color and overall preference. Eighteen free amino acids were identified in the roasted tea, showing the specially high levels of proline(170.15mg%) and glutamic acid(112.34mg%). The roasted tea also contained glucose(1.07%), maltose(0.87%), sucrose(0.63%) and fructose(0.55%). The content of citric acid(337.43mg%) in the roasted tea was the highest, followed by malonic acid(54.17mg%), oxalic acid(48.66mg%), malic acid(27.41mg%), succinic acid(4.48mg%), fumaric acid(1.08mg%) and lactic acid(trace amount), in a decreasing order.

Effects of Dietary Animal Protein Sources on Growth and Body Composition in Korean Rockfish, Sebastes schlogeli (사료내 동물성 단백질원들이 조피볼락의 성장과 체조성에 미치는 영향)

  • A 6-week feeding trial was conducted to determine the nutritional value of various dietary animal protein sources in juvenile Koran rockfish. White fish meal (WFM), flounder muscle meal (FMM), blood meal (BM), casein & gelain (CG), egg white albumin (EWA) and squid liver powder (SLP) were used as the animal protein sources, Crude protein content and available energy of the experimental diets were 50% and 15.9 kJ/g, respectively. There were significant differences among all dietary groups in weight gain (WG), feed efficiency (FE), and protein effiency ratio (PER). WFM and FFM were the best animal protein sources among the dietary groups. FMM diet had significantly higher (P<0.05) WG, FE, and PER values than those of fish fed the WFM diet. WG, FE, PER, and specific growth rate (SGR) values of fish fed BM diet were significantly higher (P<0.05) than those of fish fed EWA diet. Significant differences were found in whole body composition, hemoglobin (Hb), hepatosomatic index (HSI), and hematocrit (Ht). These results showed that low-temperature processing of lyophilized flounder muscle meal resulted in superior performance of rockfish relative to the other evaluated animal protein sources.

Instant Tea Preparation from Cassia tora Seeds (결명자로부터 인스턴트차 제조)

  • In order to develop a type of instant tea cassia tora seed, changes of constiuent amounts before and after roasting $(3{\pm}0.5min\;at\;170{\pm}5^{\circ}C)$ effective extracting solvent and it's optimum concentration, dehydration method and sensory scores were investigated. Moisture, lipid, reducing sugar, emodin and rhein were decreased by roasting, whereas protein, and total sugar of cassia tora increased. Color intensity and extracting efficacy were also increased. Of three kinds of solvent (water, methanol and ethanol), ethanol was highest in redness and yellowness of exeracts, and filtrate yield. Effective extracting concentration of ethanol for cassia tora was 50%(V/V). Freeze dry product(FDP) and spary dry product(SDP) showed coffee and aloe-like smell, coffee like brown color, rapid soluble in cold and hot water, and fast caking in air during storage. Free sugar contents were high in order of raffinose>fructose >glucose>maltose>sucrose Metallic contents were high in order of sodium>calcium>potassium>magnesium>iron. In sensory score for color, taste and aroma, FDP and SDP were both above 8.0 point, however, of them FDP more or less higher than SDP In addion, score in developing value as an instant tea was above 8.0 point (valuable).
