This study was carried out to investigate the performance of laying period of two-way crossbred of Korean native chickens. A total of four hundred eighty female 2-crossbred chicks that restored strains and were aboriginal at National Institute of Animal Science. Treatments were four crossbreds (4 replications/crossbred, 30 birds/replication) as A) C strain ${\times}$ S strain, B) C strain ${\times}$ H strain, C) R strain ${\times}$ S strain, and D) L strain ${\times}$ H strain, respectively. There were no significant difference on age, egg weight, and body weight at first egg among crossbreds (P>0.05). Body weight of D crossbred was lower compared to other crossbreds at the age of 24, 32, 40 and 60 week (P<0.05). Feed intake of A crossbred was highest among crossbreds (P<0.05). Weekly egg weight of A crossbred was the highest among crossbreds all laying period except 48~52 and 60~64 weeks. Hen-house egg production of A and B crossbreds was higher than that of C and D crossbreds (P<0.05). Hen-day egg production decreased after at the age of 36 weeks. Weekly egg production of A and B crossbreds was higher compared to C and D crossbreds (P<0.05). These results suggested the basic data on the record of laying period of 2-crossbreed Korean Native Chickens.
The objective of this study was to evaluate the effects of different levels of ${\alpha}$-tocopherol and selenium in broiler diets on performance and physicochemical properties of chicken thigh meat. A total of 360 broiler chicks divided into six groups were fed a basal diet (control) or basal diet supplemented with 50 IU ${\alpha}$-tocopherol/kg (T1), 100 IU ${\alpha}$-tocopherol/kg (T2), 200IU ${\alpha}$-tocopherol/kg (T3), 0.3 ppm selenium/kg (T4), and 100 IU ${\alpha}$-tocopherol/kg + 0.3 ppm selenium/kg (T5) for five weeks. Growth performance and proximate composition of chicken thigh meat were not influenced by all dietary treatments, except for crude fat, which was significantly lower in the treatment with ${\alpha}$-tocopherol or selenium, or both compared to control. The dietary ${\alpha}$-tocopherol and selenium supplementation had no significant effects on pH, CIE $L^*$ (lightness), and $b^*$ (yellowness) values but TBARS (thiobarbituric acid reactive substance) values were decreased (P<0.05) by the addition of ${\alpha}$-tocopherol and selenium. CIE $a^*$ (redness) values increased significantly with added ${\alpha}$-tocopherol and selenium relative to the control (P<0.05). Likewise, changes in fatty acid composition in chicken thigh meat with the dietary supplementations with ${\alpha}$-tocopherol, selenium and their combination significantly increased (P<0.05) unsaturated fatty acid, whereas saturated fatty acid were decreased. It was concluded that the addition of 200 IU ${\alpha}$-tocopherol (T3) and 100 IU of ${\alpha}$-tocopherol plus 0.3 ppm selenium (T5) were most effectiveness in the improvements in the lipid oxidative stability of chicken meat when compared to the control.
Newcastle disease virus (NDV) infects a variety of birds with a wide range of clinical signs from asymptomatic to severe. During a 10-month period in 2011, a total of 1,024 sera from wild birds including 42 species of birds in 8 orders were collected and the seroprevalence of NDV in wild birds was evaluated by hemagglutination inhibition (HI) test. Evidence of NDV infection was observed in 12.6% (129/1,024) of wild birds with a maximum prevalence reported in Mandarin duck (27.8%, 32/115) followed by Mallard duck (20.8%, 57/274), Spot-billed duck (11.9%, 36/303), Pintail (2.9%, 1/34), Black-tailed gull (2.9%, 1/34), White-fronted goose (1.8%, 1/56) and Common teal (1.4%, 1/69). None of the other 35 species of wild birds were antibody-positive for NDV. Mandarin duck, Mallard duck and Spot-billed duck showed high sero-prevalance of 12.2% to 42% during winter season (November to March). Our results indicate that Mandarin duck, Mallard duck and Spot-billed duck might be natural reservoirs for NDV in Korea and the prevalence of NDV infection in wild birds displayed a seasonal pattern with high prevalence of NDV in winter season (November to March).

The objective of this study was to evaluate the effects of different levels of dietary ME on growth performance and carcass characteristics in two different strains of broiler chicken. A total of one thousand, 1-day-old A strain and R strain male chicks were randomly assigned into 8 treatments in a $2{\times}4$ factorial arrangement. They were fed iso-nitrogenic (CP 21%) crumbled diets formulated to contain metabolizable energy (ME) 2,950 to 3,250 kcal/kg in increment of 100 kcal/kg in the starter phase (1 to 21d) and iso-nitrogenic (CP 19%) pelleted diets containing same ME levels as in the finishing phase (22 to 38d). The body weight (BW) gain of chicks fed the lower ME diets (2,950 or 3,050 kcal/kg) were higher than those of the higher ME groups. The dietary energy level showed significant effects on feed intake and feed conversion rate (FCR) from 1 to 38 days of age (p<0.05). With the increment of dietary energy, feed intake tended to be reduced, whereas FCR was improved in the two strains of broiler chickens. The lowest FCR was observed at 3,250 kcal/kg diet groups in both of the two strains from 1 to 38 days of age. Feed intake and BW gain during 38 days were significantly affected by the strain factor. Increasing dietary energy up to 3,250 kcal/kg had no effect on the relative weights of breast meat and abdominal fat. The dietary energy and strains showed significant effects on the dressing percentage. There were no significant differences in various blood profiles except for GPT activity.
This study was conducted to investigate the effects of dietary supplementation of Cu-sulfate, Cu-methionine chelate (Cu-Met) and Cu-soy proteinate (Cu-SP) on the performance, blood parameters and mineral contents of muscle. It was conducted with a total of 1,000 one d old broilers chickens (Ross$^{(R)}$) which were assigned to four dietary treatments; Control, Cu sulfate (200 ppm Cu as $CuSO_4{\cdot}5H_2O$), Cu-Met (200 ppm Cu as Cu-methionine chelate), Cu-SP (200 ppm Cu as Cu-soy proteinate). There were significant differences (p<0.05) among treatments in weight gain. Weight gain of Cu treated groups were higher than the control during 3~5 wk. There were significant differences (p<0.05) among treatments in feed intake during 0~3 wk. Cu-Met was significantly (p<0.05) lower than the control but the differences among Cu treatments were not significant. There were significant differences (p<0.05) among treatments in feed conversion rate (FCR). Cu treated groups were lower than the control during the whole period. Production efficiency factor (PEF) was significantly higher (p<0.01) in Cu treated groups than the control. Nutrient availabilities of diets were not significantly different among the treatments. The count of white blood cell (WBC) and eosinophil (EO) were lower in Cu-SP treatment than in the control. Copper concentration in the liver was significantly (p<0.01) higher in Cu treated groups than the control. Zinc concentration in the breast and wing muscle was lower in Cu treated and that of leg muscle was higher in Cu-Met than the control. The result of this experiment showed that Cu supplementation at the level of 200 ppm as Cu sulfate, Cu-Met and Cu-SP improves weight gain (4~5 wk), FCR and PEF. Differences among Cu sources were not significant.
This study was to investigate the amino acid, free amino acid and fatty acid composition of chicken breast muscle and legs muscle by different raising periods (30, 36 and 42 days). In amino acid composition, the glutamic acids were 3.63% at 30 days, 3.63% at 36 days and 3.54% at 42 days in the breast muscle. The glutamic acid contents in the breast and leg muscle were decreasing tendency as raising periods increased. The total free amino acids were 370.6 mg at 30 days, 235.9 mg at 36 days and 246.3 mg at 42 days in the breast muscle, and those were 470.16 at 30 days, 326.4 mg at 36 days and 321.9 mg at 42 days in the leg muscle. Total contents of free amino acids were higher in chicken legs muscle than in chicken breast muscle. The linoleic acids, the most essential fatty acid, were contained 17.84% at 30 days, 17.84% at 36 days and 20.33% at 42 days in chicken breast muscle. These results indicated that the fatty acid composition increased as raising periods increased. There were 0.69% DHA (Docosahexaenoic acid) in chicken breast muscle at 30 days, 0.96% at 36 days and 1.29% at 42 days. From these results, the DHA contents in chickens were also increased as raising periods increased.
This study was conducted to investigate the effect of feeding the electrolytic materials on blood and carcass traits of broiler during transportation exposed under intense heat condition in summer. The broilers were selected on the day when the outside temperature was about $32^{\circ}C$ to provide heat stressed environment. Broilers reared for 33 d were selected and fed with the electrolytic materials ($NaHCO_3$, NaCl, KCl) for 2 days. Treatments were as follows; feeding the underground water for control, $NaHCO_3$ (1.0%) + NaCl (0.5%) for treament 1, KCl (0.5%) + NaCl (0.5%) for treatment 2, KCl (1.0%) + NaCl (0.5%) treatment 3, KCl (0.5%) + $NaHCO_3$ (1.0%) + NaCl (0.5%) for treatment 4 and KCl (1.0%) + $NaHCO_3$ (1.0%) + NaCl (0.5%) for treament 5. pH of chicken meat increased for treatments group of electrolytic material, especially, that of treatment 3 was highest when compared to the other treatments. The frequency rate (%) of $1^+$ quality grade were 33.3, 60.0 and 83.3% at control, treatment 3, 4 and treatment 5, respectively. Occurrence rates of PSE were 50% for control and 13.3% for treatment 5. Corticosterone increased at the post-harvest period compared to the pre-harvest period of broiler and have small disparity between pre-and post-harvest only except treatment 3 when compared to control. $pCO_2$ partial pressure of blood at the pre-harvest period was low in all treatments by heat stress, the disparity value of control was high for control, and those of treatment 4 and 5 were low compared to other treatments.
To investigate the effect of dietary supplementation of freeze-dried plum (Prunus mume Siebold and Zucc., PMS) or omija meal (Schizandra chinensis Baill.; SCB) on growth performance, organ weights, blood biochemical profiles and antioxidant defense system, a total of 96, 3-day-old male broiler chickens were assigned to three dietary groups: (1) control diet, (2) control diet supplemented with PMS at 0.2%, (3) control diet supplemented with SCB at 0.2%. In vitro antioxidant activity, plum and omija extracts showed a significantly higher radical scavenging activity (RSA). In particular, omija extract showed much higher RSA than plum extract. Dietary addition of plum or omija did not affect body weight, feed intake, feed conversion and the relative weight of digestive organ in birds. Plasma triglyceride significantly (P<0.05) increased in birds fed the diet supplemented with omija compared with those fed control diet without affecting the other blood biochemical components. Furthermore, reduced form of glutathione (GSH) in the liver or muscle significantly (P<0.05) increased in birds fed the diet fortified with plum and omija. However, the specific activities of superoxide dismutase (SOD), glutathione peroxidase (GPX) and glutathione-S-transferase (GST) and MDA (malondealdehyde) in the intestine, liver and muscle were not altered by dietary antioxidant sources. In conclusion, dietary plum and omija resulted in a positive effect on some antioxidant indicators such as increased in vitro RAS in extracts and in vivo GSH level in the liver and muscle without affecting growth performance. Therefore, dietary addition of 0.2% of plum or omija could be applicable as potential antioxidant sources in broiler chick production.

Groups were four crossbreds (4 replications/crossbred, 30 birds/replication) as A) C strain ${\times}$ Y strain, B) C strain ${\times}$ L strain, C) C strain ${\times}$ G strain and D) C strain ${\times}$ W strain. Body weight of A crossbred was the highest at the age of 8 week (P<0.05) and that of D strain was the lowest for growing period (P<0.05). Body weights of A and B crossbreds were higher than those of C and D crossbreds at the 12 and 16 weeks (P<0.05). Weekly body weights of A and B crossbreds were higher than C and D crossbreds (P<0.05), and weekly body weight of B crossbred was higher compared to other crossbreds at 0~20 weeks old. Weekly feed intake of D crossbred was the lowest among all crossbreds at 0~12, 0~16 and 0~20 weeks old (P<0.05). Weekly feed conversion ratio of C crossbred was the highest among crossbreds (P<0.05). These results can give the basic information for growth related data in 2-way crossbreed Korean Native Chickens, which can be used for the parental stocks for the laying-type of Korean native commercial chickens.
Hand deboned and mechanically deboned chicken meat were produced from domestic broilers and spent layers. Meat yield, chemical composition, functional characteristics, storage stability and microbiogical properties were investigated. The results obtained were as follows: 1. 35% of carcass freight was recovered primarily as hand deboned chicken meat (HDM) and 45% secondarily as mechanically deboned chicken meat(MDM), total meat yield reaching 80% of carcass weight. 2. Moisture, protein, fat. ash and calcium content of MDM were 65, 12, 20, 1.7 and $0.2{\sim}0.4%$, respectively MDM was higher than HDM in fat, ash and calcium, but significantly lower in moisture and protein Total pigment content of MDM was 2.5 times higher than that of HDM, such high content being attributed to the increased inclusion of hemoglobin during the mechanical masceration of carcass in the deboning process. 3. The emulsifying capacity (ES) of MDM per g meat was only 70% that of HDM, but when ES was expressed on unit g of protein basis MDM showed even higher ES than HDM primarily due to the higher proportion of salt soluble protein fraction of MDM. 4. Since the TBA value of MDM increased rapidly after 4 weeks of frozen storage at $-20^{\circ}C$, the maximum possible storage period of MDM is estimated to be about 4 weeks. 5. Total microbial counts of MDM was approximately $1.8{\times}10\;cells/g$ showing no great difference from HDM or red meat.
