Commercial food grade porcine-pancreatic lipase was incorporated into cheese at two different levels of concentration and ripened at $7^{\circ},\;13^{\circ}\;and\;21^{\circ}C$ Gas chromatographic analysis showed that the pancreatic lipase-treated cheese produced significantly higher levels of short-chain free fatty acids than controls. At $21^{\circ}C$ the high level of pancreatic lipase-treated cheese produced medium flavor cheese at 1 wk and close to sharp flavor cheese at 3 wk without causing distinctive defects. The low level of pancreatic lipase-treated cheese developed a number of good quality cheese. They were roughly equivalent to medium and sharp cheeses when ripened at $7^{\circ},\;13^{\circ}\;and\;21^{\circ}C$ for 3 to 15wk. Statistical analyses indicated that there were significant correlations between aged Cheddar flavor and the concentration of c6 as individual short chain free fatty acids (FFA) or C4 and C6 FFA combinations. Pancreatic lipase may be applicable for the accelerated ripening of Cheddar cheese if appropriate conditions are used.
This study analyzes life experiences and prospects of poverty/welfare exit of the poor with work ability utilizing Mixed methodology. Based on Sequential Exploratory Design, it qualitatively analyzes 3 waves of qualitative panel data linked to Korea Welfare Panel Study(KWPS) and presents life changes of 14 poor in the context of their prospects of welfare/poverty exit. Then it proposes hypotheses on the role of education, household economy expectation, self-esteem in the prospects of poverty/welfare exit following the sequential exploratory design to quantitatively test qualitative findings utilizing KWPS(7th). The outcomes of the Structural Equation Model(SEM) suggest that household economy expectation plays mediating role between education and the prospects of welfare/poverty exit. This implies that anti-poverty policy needs to consider a psychological approach to enhance household economy expectations of the poor as well as other material support.

Changes in physiochemical properties and polyphenol activities of wine fermented with apples and Rosa rugosa Thun were investigated. To this end, four different mixing ratios of apple and R. rugosa, including R. rugosa:apple 2:1 (Apple 33), R. rugosa:apple 1:2 (Apple 67), R. rugosa:apple 1:5 (Apple 83), and apple alone (Apple 100), were prepared and fermented by Saccharomyces bayanus for 14 days at $24^{\circ}C$ with a further 14 days of post-fermentation at $20^{\circ}C$. The final ethanol content ranged from 8.2.10.2%, with no significant difference between the four groups after fermentation and post-fermentation. Final Brix, pH, and total acidity of the four samples ranged from 7.1.7.5 Brix, pH 3.85.4.07, and acidity 0.73.1.19%. As the proportion of R. rugosa increased, the anthocyanin content and color intensity of wine also increased, whereas the free amino acid concentration decreased.

Cherry silverberry (Elaeagnus multiflora) contains bioactive phenolics. This study was conducted to determine whether feeding cherry silverberry wine (CSW) to rats would alleviate the progress of alcoholic fatty liver. Adult male Sprague-Dawley rats were divided by weight into the following three groups. Two groups of rats were fed 6.7% ethanol or the caloric equivalent Lieber-DeCarli diet containing maltose-dextrin, and the other group an isocaloric Lieber-DeCarli diet containing CSW at the same ethanol level for 6 weeks. CSW's flavonoids, its antioxidant and free radical scavenging activities, serum transaminases, serum and hepatic lipids, and liver histology were examined. Our results showed that CSW exerted significant antioxidant and radical scavenging activities. The serum activities of alanine and aspartate transminases were markedly decreased by CSW at 6 weeks. Also, CSW feeding resulted in significant reductions in blood cholesterol and triglyceride. The development of alcoholic fatty liver was significantly delayed by lowering fat accumulation. Taken together, these results indicate that CSW may help protect the liver against alcoholic fatty liver by improving serum and hepatic lipid status. This may be associated with the protective effect of CSW on alcoholic fatty liver via bioactive phenolic compounds.
Moru (wild grape), blueberry, bokbunja (blackberry), and blackcurrant were mixed with domestic Campbell Early grapes to improve the quality of domestic wines made from the grape. The color of the Campbell wine was greatly darkened by mixing it with the fruits. The L-value of the wine color during fermentation was lowered from 34 to $6{\sim}13$ by mixing it with 20% bokbunja or blackcurrant. In addition, the a-value of the wine color during fermentation was lowered from 54 to $36{\sim}46$ by mixing it with 20% bokbunja or blackcurrant. The mixing of moru or blueberry also lowered the L- and a-values, but this darkening effect was not higher than that of the Campbell wine that was mixed with bokbunja and black currant. The polyphenol concentration of the wine was greatly increased by mixing it with black currant and bokbunja. The blackcurrant mixed wine had a polyphenol concentration as high as 1.87 mg/mL, whereas the wine made from the Campbell Early grapes alone contained only 1.02 mg/mL of polyphenols after 15 days of fermentation. A sensory evaluation showed that the quality of Campbell wine was the least favorable among different grapes, but its quality was greatly improved by mixing it with bokbunja, black currant, and moru.

Four different mixing ratios of Rose rugosa Thun and Vitis amurensis (Moru) were prepared. These included Rose rugosa Thun two vs. Moru one (Moru 33), Rose rugosa Thun one vs. Moru two (Moru 67), Rose rugosa Thun one vs. Moru five (Moru 83), and Moru (Moru 100). Their physiochemical changes were investigated during 28 days of fermentation followed by aging. The final brix, pH, and total titratable acidity values of the four experiments were in the following ranges: 6.0-8.2$^{\circ}$Bx, 3.87-4.03, and 0.94-1.18%, respectively. Final ethanol contents were 6.5% in Moru 33, 11.8% in Moru 67, 11.1% in Moru 83, and 11.4% in Moru 100. As the amount of Rose rugosa Thun increased, anthocyanin content, color intensity, organic acid, and free amino acid concentrations were reduced. These findings demonstrate that the supplementation of Rose rugosa Thun to Moru prior to alcohol fermentation may help change the acidity, colour, and taste in the final product.

Purpose: We investigated the clinical presentation of febrile pediatric patients with acute pyelonephritis (APN) with a mixed urine culture from an aseptic urine sample, and compared with that of those with a single culture. Methods: We retrospectively reviewed the medical charts of 95 patients diagnosed as APN with fever between January 2008 and October 2010 at Korea University Medical Center. We classified the patients with APN into two groups with a positive single culture (S group) and a positive mixed culture (M group) from an aseptic urine sample of suprapubic bladder aspiration or urethral catheterization and compared the fever duration, laboratory markers such as serum white blood cell (WBC) counts and C-reactive protein (CRP) values in peripheral blood, and the presence of hydronephrosis, renal scar and vesicoureteral reflux (VUR) between the two groups (If presence of hydronephrosis, scar and VUR=1 and no=0). Results: Total pediatric patients with febrile APN were 95 patients, a positive S group was 89 patients and a positive M group was 6 patients. Fever duration (S vs. M, $4.7{\pm}3.1$ vs. $6{\pm}5.7$ days), serum WBC (S vs. M, $18,630{\pm}6,483$ vs. $20,153{\pm}7,660/{\mu}L$) and CRP (S vs. M, $100.6{\pm}2.46$ vs. $81.1{\pm}0.09\;mg/L$) values, and the presence of hydronephrosis, renal scar and VUR were not different between the two groups. Conclusion: Our data shows that there were no specific differences of clinical manifestation between a positive single urine culture and a positive mixed urine culture in pediatric APN. A mixed urine culture from an aseptic urine sample should be interpreted cautiously.
The objective of this research was to investigate the impact of Ca fertilizer on the growth of mother plants, physiological disorders, and occurrence of daughter plants in propagation of 'Seolhyang' strawberry through plastic bag cultivation. To achieve this, chemicals of 1.125 mM $Ca(OH)_2$, 0.375 mM $MgCl_2$, 1.250 mM KCl were blended and designated to combined fertilizer (CF). Then, the effect was compared to the treatment of no Ca application (control) and a commercial fertilizer, CalMag (13-0-1.9-16-6:N-$P_2O_5$-$K_2O$-CaO-MgO), when those were applied every two weeks with controlled electrical conductivity (EC) of solution such as 0.6 or 1.0 $dS{\cdot}m^{-1}$. The number of plants showing Ca deficiency symptoms was the highest in control treatment, but those decreased significantly in CF or CalMag treatments. The differences between CF and CalMag in appearance of Ca deficient plants were not significant when two fertilizers were applied with same EC. The fresh and dry weights of mother plants were the greater in the treatments of CF or CalMag than those of control treatment. The treatments of 1.0 $dS{\cdot}m^{-1}$ of CF or CalMag were more effective than those of 0.6 $dS{\cdot}m^{-1}$ on the fresh and dry weight of the mother plants. The runner lengths in the treatment of 1.0 $dS{\cdot}m^{-1}$ of CF were the longest among the all treatments tested. The treatments of 1.0 $dS{\cdot}m^{-1}$ were more effective than those of 0.6 $dS{\cdot}m^{-1}$ of CF or CalMag in lengths and fresh and dry weight of runners. The fresh and dry weights of daughter plants were heavier in the treatments of CF than those of CalMag. Based on the above results, we concluded that the Ca deficiency in raising 'Seolhyang' strawberry can be lessened by the application of Ca containing fertilizers, but combined application of Ca, K and Mg was more effective than that of Ca alone for seedling production.
