Response of Germination Rate to Variable Drying Conditions and Moisture Contents for Storage of Dehisced Korean Ginseng Seeds

  • We compared the germination rate of dehisced ginseng (Panax ginseng) seeds that were dried under two different conditions, slowly at $15^{\circ}C$ [relative humidity (RH) 10-12%] and rapidly under a laminar airflow cabinet at $25^{\circ}C$ (RH 22-25%). The measurements showed that drying rate and seed moisture content (SMC) play important roles in storage ability and vigor. The seeds that were dried rapidly at $25^{\circ}C$ showed high GR compared with the seeds that were dried at $15^{\circ}C$ after 6 and 12 months of storage at $-80^{\circ}C$ irrespective of MC. Seeds dried slowly at $15^{\circ}C$ with MC higher than 7.0% showed high GR maintenance after storage at $-18^{\circ}C$ and at $4^{\circ}C$ in comparison with rapidly dried seeds. However, the GR of the slowly desiccated seeds decreased as mean SMC was reduced to less than 5.0%, whereas the rapidly dried seeds were distinguished by significantly high GR irrespective of the storage conditions. The ginseng seeds desiccated under different conditions showed differences in storage performance. Seeds with 7-9% MC that were dried slowly at $15^{\circ}C$ for 5-7 days showed high GR after $4^{\circ}C$ and $-18^{\circ}C$ storage; however, longer periods of desiccation decreased the germination level remarkably compared with that of rapidly dried seeds.

Quality Characteristics of Yukwa Fried with Palm Oil during Storage (팜유로 튀긴 유과의 저장 중 품질 변화)

  • Yukwa is a popular Korean traditional fried rice snack. The high fat content and porous structure of Yukwa cause it to become rancid rapidly. For extending the shelf-life of Yukwa, the Bandegi was fried with palm oil and soybean oil. The stability of Yukwa in lipid oxidation was determined by acid value(AV), peroxide value(POV), composition of fatty acid and sensory evaluation during 8 weeks of storage at 20$^{\circ}C$ and 50$^{\circ}C$ As the storage time increased, the AVs of soybean oil and palm oil during storage at 50$^{\circ}C$ were increased up to 42.64 and 2.09 mg/g, respectively. The POV of soybean oil during storage at 50$^{\circ}C$ was increased up to 4 weeks and then decreased. And as the storage time increased, the contents of stearic and oleic acid were increased, while linoleic and linolenic acid were decreased.

The Preparation of Canned Pufferfish and Its Keeping Stability (복어 통조림 제조 및 저장 안정성)

  • This study was designed to investigate the preparation of canned pufferfish and its quality during storage at 4$^{\circ}C$${\pm}$0.5 and 25$^{\circ}C$${\pm}$0.5. The proximate compositions of the raw pufferfish were moisture 77.8%, protein 18.4% and lipid 3.3%. After the preparation of canned pufferfish there were no significant changes. During storage at 4$^{\circ}C$${\pm}$0.5 and 25${\pm}$0.5, the amino nitrogen(NH2-N) contents and acid value(AV) in both the raw and canned pufferfish revealed little difference. The volatile basic nitrogen(VBN) contents in the raw and canned pufferfish were in the range of 10.7mg/100g∼19.2mg/100g, and had no change during storage. Viable cell counts of the canned pufferfish had no change during storage at 4$^{\circ}C$${\pm}$0.5 and 25$^{\circ}C$${\pm}$0.5. The toxicity was below 2MU/g in the raw pufferfish, and it was also nontoxic in the canned pufferfish during storage.

Effect of Treatment with Garlic or Lemon Juice on Quality Characteristics during the Storage of Mackerel Pike (저장시 마늘즙과 레몬즙 처리가 꽁치의 품질특성에 미치는 영향)

  • The purpose of this study was to investigate me effects of garlic or lemon juice on quality characteristics of fish muscle. The samples treated with garlic or lemon juice by me amount of 5% or 10% (w/w) of fish muscIe were stored at $4{\pm}1^{\circ}C$ and $-18{\pm}2^{\circ}C$ for 10 and 40 days, respectively. The results are summarized as follows; 1. In me taste of samples, me samples treated with 5% garlic juice showed me most favorite tendency all me storage time at $4{\pm}1^{\circ}C$ and $-18{\pm}2^{\circ}C$. 2. There were significant in fishy odor after 5 days of storage at $4{\pm}1^{\circ}C$ and 40 days of storage at $-18{\pm}2^{\circ}C$ . The fishy odor of samples treated with garlic juice were weaker man those of samples untreated or treated with lemon juice. 3. The appearance was evaluated the worst in 10% lemon juice treated sample among all me samples. 4. The hardness of the samples treated with lemon juice were lower man those of samples untreated or treated with garlic juice during all the storage time at $4{\pm}1^{\circ}C$ and $-18{\pm}2^{\circ}C$. 5. The score of overall quality was the highest in sample treated with 5% garlic juice during all the storage time at $-18{\pm}2^{\circ}C$.

Inhibition of Escherichia coli 0157:H7 and Staphylococcus aureus 196E by allspice (Pimenta dioica L.) during cold storage (저온저장중 Allspice(Pimenta dioica L.)에 의한 Escherichia coli 0157:H7과 Staphylococcus aureus 196E의 생존억제)

  • The effect of low concentrations of allspice (Pimenta dioica L.) in culture broth as an antibacterial agent against Escherichia coli 0157:H7 and Staphylococcus aureus 196E was tested at 35,5 and -20$^{\circ}C$. Tryptic soy broth (TSB) containing 0∼2% (w/v) of allspice was inoculated with 10$\^$5/∼10$\^$6/ cells/$m\ell$ of E. coli and S. aureus and incubated at each temperature. The growth of E. coli was not inhibited at 0.1∼1.0% allspice and growth occured at 2% allspice but only after a prolonged lag period. Growth of S. aureus was inhibited with increasing concentration of allspice at 35$^{\circ}C$. Growth of S. aureus occured at the presence of 0.1∼0.3% allspice but the viability of S. aureus at 0.5∼2.0% allspice was decreased during storage at 35$^{\circ}C$. During refrigerated storage at 5$^{\circ}C$, inhibition of E. coli and S. aureus was increased with the progress of time and increasing spice concentration. During frozen storage at -20$^{\circ}C$, antibacterial activity of allspice against E. coli was increased with increasing storage time and spice concentration while that activity against S. aureus was effective during early period of storage. There was no major changes in population of S. aureus in TSB with different concentration of spice frozen at -20$^{\circ}C$. Viable counts of E. coli and S. aureus at 0.l% of allspice was less than that of control during frozen storage.

Effects of Storage Temperature and Time on the Quality of Eggs from Laying Hens at Peak Production

  • The objective of this study was to evaluate the effects of storage temperature and time on the quality parameters of eggs from laying hens at peak production. A total of 576 eggs were obtained from Lohmann Light-Brown hens, which were collected 3 times when the hens were 26, 27, and 28 weeks old. The fresh eggs were collected and measured within 2 h of being laid. Samples of 48 eggs each were stored in chambers for 2, 5, or 10 d inside a refrigerator ($5^{\circ}C$), at room temperature ($21^{\circ}C$), and at a high temperature ($29^{\circ}C$). As the storage temperature and time increased, egg weight, percentage of albumen, Haugh unit (HU), and yolk color significantly (p<0.001) decreased. In addition, egg shell weight, shell percentage, and albumen weight significantly (p<0.001) decreased with storage time. Yolk weight, yolk percentage, and albumen pH significantly (p<0.001) increased with increasing storage temperature, and yolk pH significantly (p<0.001) increased with increasing storage time. When the storage temperature was increased to $29^{\circ}C$, egg weight loss dramatically increased from 1.74 to 3.67% at 5 and 10 d of storage time, respectively. With the exception of the $5^{\circ}C$ storage temperature, HU dramatically decreased according to storage time and temperature, decreasing from 91.3 to 72.63 at $21^{\circ}C$ and from 87.62 to 60.92 at $29^{\circ}C$ during 10 d of storage; however, this decline was not found at $5^{\circ}C$. A rapid increase in albumen alkalinity was observed even after just 2 d of storage regardless of the storage temperature. Interactions between storage time and temperature were significant (p<0.001) with respect to egg weight loss, egg shell weight and percentage, albumen weight and percentage, yolk weight and percentage, albumen and yolk pH, HU, and yolk color. The results of the current study indicated that eggs from laying hens at peak production had significant deterioration of internal quality with increasing storage temperature and time. The results suggest that egg weight loss, albumen pH, and HU are parameters that are greatly influenced by the storage temperature and time of eggs from hens at peak laying.

A Basic Study on the Air Circulation System for Heating using Solar and Geothermal Heat - Focused on Trombe Wall Thermal Storage Performance using Solar Heat - (태양열과 지열을 이용한 난방용 공기순환시스템 기초연구 - 태양열을 이용한 트롬월식의 축열성능 중심으로 -)

  • Each country in the world currently concentrates on shifting into clean energy, which can be alternative energy, for global environment protection and solution to the problem of fossil fuel depletion. The Korean government is predicted to develop renewable energy, such as solar power, ground power, and offshore wind power, and to increase their supply ratios by ending the use of coals and nuclear power plants. This study conducted experiments on thermal storage performance of Trombe wall thermal storage materials using solar power and simulations in order to offer baseline data for the development of a hybrid air circulation system for heating that can maximize efficiency by simultaneously using solar and geothermal power. The study results are as follows: (1) In all the specimens with 3m, 5m, and 7m in the length of thermal storage pipe, $5.7^{\circ}C$, $7.8^{\circ}C$, and $10.5^{\circ}C$ rose, respectively, as the thermal storage effect of the specimens attaching insulation film and black tape to the general funnel. They were most excellent in terms of thermal storage effect. (2) As a result of thermal performance evaluation on the II type specimens, II-3 ($7.8^{\circ}C$ rise) > II-4 ($5.3^{\circ}C$ rise) > II-1 ($3.9^{\circ}C$ rise) > II-2 ($2.3^{\circ}C$ rise) was revealed, and thus II-3 (insulation film + black tape) was most effective as shown in the I type. (3) This study analyzed air current and temperature distribution inside of the greenhouse by linking actually measured values and simulation interpretation results through the interpretation of CFD (computational fluid dynamics). As a result, the parts absorbing heat and discharging heat around the thermal storage pipe could be visibly classified, and temperature distribution inside of the greenhouse around the thermal storage pipe could be figured out.

Microbiological and Sensory Evaluations of Chicken Wings Treated with Acetic Acid and Trisodium Phosphate during Retail and Refrigerated Storage (초산과 Trisodium Phosphate로 처리한 닭고기의 소매점 판매와 냉장 동안 미생물 및 관능평가)

  • Microbiological and sensory evaluations of chicken wings treated with acetic acid and trisodium phosphate(TSP) during retail(1${\pm}$2$^{\circ}C$) and refrigerated storage(4$^{\circ}C$). Chicken wings(average weight of 15${\pm}$2g per leg) were treated with 0.5∼2% aerobic plate counts(APC) on the surface of chicken wings for storage of 16 days at 4$^{\circ}C$. During storage of 12 days at retail store(1${\pm}$2$^{\circ}C$), the treating chicken wings with 7.5∼10% TSP solutions for 10 min showed significantly inhibitory effect in preventing the growth of aerobic microbes. For odor and appearance scores, chicken wings treated with 0.5∼2% acetic solutions resembled untreated wings for storage of 16 days at 4$^{\circ}C$. However, both odor and appearance scores of chicken wings treated with 2.5∼10% TSP solutions were similar to those of untreated wings for storage of 4 days, and a higher in the storage of beyond 8 to 12 days at retail store.

Changes of Lipids in Chestnut during Storage (밤의 저장중 지방질 조성의 변화)

  • Studies were carried out to investigate the changes of lipids in chestnut (Castanea crenata Sieb. et Zucc) during storage at $20^{\circ}C$ for 9 weeks and $1^{\circ}C$ for 15 weeks. Lipid composition of fresh chestnuts were 43.4% of nonpolar lipid (NPL), 26.5% of glycolipid (GL) and 30.1% of phospholipid (PL) in total lipid (TL). Nonpolar lipid was composed of triglyceride (TG), 1,2-diglyceride (1,2-DG), 1,3-diglyceride (1,3-DG), sterolester (SE), sterol (S) and free fatty acid (FFA). Main constituents of glycolipid were digalactosyldiglyceride (DGDG), monogalactosyldiglyceride (MGDG), sterylglycoside (SG), and acylsteryglycoside (ASG). Main constituents of phospholipid were phosphatidylcholine (PC), phosphatidylethanolamine (PE) and phosphatidylinositol (PI). The content of nonpolar lipid was decreased after 5 weeks of storage, and glycolipid content was increased during 7 weeks and then decreased. Phospholipid was the most increased lipid during storage at $20^{\circ}C$ and $1^{\circ}C$. The contents of TG, SE, S, DGDG and MGDG were increased during storage at $20^{\circ}C$ and $1^{\circ}C$. The major fatty acids were linoleic acid, oleic acid, palmitic acid and linolenic acid in TL, NPL, GL, PL, TG, DG, ASG, PC and PE. The content of palmitic acid was relatively higher in the PL. Linoleic acid among them was increased during storage at $20^{\circ}C$ and $1^{\circ}C$, while oleic acid was decreased.

Changes of Fatty Acid Composition of Lipid in Raw and Processed Adlay Powder during Storage (저장중 율무가루 지방질의 지방산 조성의 변화)

  • Raw adlay powder (RAP) and processed adlay powder (PAP) were prepared and the changes of fatty acid compositions of lipids in RAP and PAP during storage at $5^{\circ}C\;and\;35^{\circ}C$ for six months were studied. The major fatty acids found in the adlay lipids were oleic acid (28-45%), linoleic acid (38-50%) and palmitic acid (14-18%). Throughout the storage period, the concentrations of linoleic acid were decreased in samples stored at $35^{\circ}C$, but those of oleic acid and palmitic acid were relatively increased according to the oxidation proceeded. However, the concentrations of these fatty acids were hardly changed in samples stored at $5^{\circ}C$. These changes were especially more notable in the lipids from RAP than those from PAP during storage Little difference in fatty acid composition was noted between neutral lipids and triglycerides in the samples.
