딸기식초 제조를 위한 초산발효 조건 최적화 (Optimization of the Acetic Acid Fermentation Condition for Preparation of Strawberry Vinegar)

  • 딸기식초 제조를 위해 1차 단계로 Saccharomyce kluyeri DJ97을 이용하여 딸기과즙을 14$^{\circ}$Brix로 보당한 후 28$^{\circ}C$에서 50시간동안 발효시켜 딸기 알콜발효액을 얻은 후 사용하였다. 2차 단계에서, 초산발효를 시킨 결과 산도는 초기산도가 1.48%, 교반속도가 195.76 rpm, 발효시간이 7.34 day일 때 가장 높은 4.60%를 나타내었다. 색차계 a값은 초기산도가 1.78%, 교반속도가 117.63 rpm. 발효시간이 7.35 day일 때 가장 높은 11.82를 나타내었다. 딸기식초 제조를 위해서는 Acetobacter sp. PA97를 이용하여 초기산도 1.5% 및 교반속도 196 rpm에서 176시간 발효함으로서 산도 4% 이상의 식초를 얻었다.

Evaluation of the Activities of Antioxidant Enzyme and Lysosomal Enzymes of the Longissimus dorsi Muscle from Hanwoo (Korean Cattle) in Various Freezing Conditions

  • This study was conducted to evaluate the activities of antioxidant enzyme (glutathione peroxidase (GSH-Px)) and lysosomal enzymes (alpha-glucopyranosidase (AGP) and beta-N-acetyl-glucosaminidase (BNAG)) of the longissimus dorsi (LD) muscle from Hanwoo (Korean cattle) in three freezing conditions. Following freezing at -20, -60, and $-196^{\circ}C$ (liquid nitrogen), LD samples (48 h post-slaughter) were treated as follows: 1) freezing for 14 d, 2) 1 to 4 freeze-thaw cycles (2 d of freezing in each cycle), and 3) refrigeration ($4^{\circ}C$) for 7 d after 7 d of freezing. The control was the fresh (non-frozen) LD. Freezing treatment at all temperatures significantly (p<0.05) increased the activities of GSH-Px, AGP, and BNAG. The $-196^{\circ}C$ freezing had similar effects to the $-20^{\circ}C$ and $-60^{\circ}C$ freezing. Higher (p<0.05) enzymes activities were sustained in frozen LD even after 4 freeze-thaw cycles and even for 7 d of refrigeration after freezing. These findings suggest that freezing has remarkable effects on the activities of antioxidant enzyme and lysosomal enzymes of Hanwoo beef in any condition.

건조 전처리에 의한 자생 Aquilegia속 식물 종자의 초저온 저장과 발아 (Cryopreseryation and Germination of Native Aquilegia Species Seeds by Predehydration Treatment)

  • 한국 자생 매발톱꽃속 종자 식물유전자원의 장기저장을 위해 건조 전처리에 의해 종자 수분함수율을 저하시킨 후 액체질소(-196$^{\circ}C$) 중에서 생존 가능성 및 보존에 관해 시험하였다. 종자 수분함수율은 10분~2시간에 걸친 다양한 건조조건에 의해 9.7~3.2%로 비례적으로 감소하였다. 건조 전처리한 매발톱꽃속 종자를 액체질소 내에 6개월간 저장하여 38$\pm$5$^{\circ}C$ 온수에 해동시켜 발아율 및 발아세, 평균발아기간을 조사하였다. 건조 무처리 한 수분 함수율10.9% 조건의 매발톱꽃 종자는 초저온 보존 후, 발아율이 52.5%로 나타났으나 60분간 건조 전처리 하여 수분 함수율이 6.0%로 조정된 종자의 경우는 84.7%가 발아하였다. 또한 발아세에 있어서도 수분 함수율이 5% 내외로 적절히 건조 전처리 한 매발톱 꽃속 종자는 초저온 보존 이후에 60%이상의 높은 발아세와 11~13일의 고른 평균 발아기간이 나타났다. 본 시험의 결과, 적절한 처리시간에 의해 건조 전처리한 자생 매발톱꽃속 종자를 초저온 조건의 액체질소에 장기 저장하여도 대조구에 비해 발아율은 약 0.5%가 저하하였으나 발아세, 평균발아율에는 큰차이가 나타나지 않았다. 또한 발아묘의 기형적인 형태적 변화도 관찰되지 않았다. 그러므로 단명성인자생 매발톱꽃속 종자의 초저온 보존은 식물 유전자원을 유전적으로 안전하고 경제적으로 저장할 수 있는 방법으로 사료된다.

수소취화된 CANDU 압력관 재료의 파괴강도 평가를 위한 SP시험에 관한 연구 (A Study on the Small Punch Test for Fracture Strength Evaluation of CANDU Pressure Tube Embrittled by Hydrogen)

  • 본 연구의 목적은 지금까지 적용되지 않은 극소형시험편을 이용한 소형펀치(small punch : SP)시험과 비파괴시험방법(non-destructive test: NDT)으로 알려진 음항방출(acoustic emission : AE)시험에 의해 수소취화된 압력관 재료의 새로운 파괴강도 평가법으로서 SP시험의 적용 가능성을 조사하는데 있다. 시험결과, 300ppm-H까지의 수소농도에서, 수소농도에 따른 Esp의 저하가 상온보다 $-196^{\circ}C$의 경우가 뚜렷하여, 수소취화정도에 따른 Zr-2.5%Nb 압력관 재료의 파괴강도 평가는 상온보다 $-196^{\circ}C$의 저온환경하에서의 평가가 더욱 우수함을 알 수 있었다. 또한 수소농도의 증가에 따라 재료의 파괴과정에서 발생하는 AE신호의 평균에너지의 peak와 누적 평균에너지 그리고 단위 등가파괴변형률(equivalent fracture strain : ${\epsilon}_{qf}$)당 누적 평균에너지의 값이 크게 증가하였다. 그리고 하중-변위거동, Esp 거동, 거시적, 미시적 SEM 관찰 그리고 AE 시험 결과들로부터 미소시험편을 이용한 SP시험법은 수소취화된 CANDU 압력관 재료의 새로운 파괴강도 평가법으로 유용성이 있음을 알 수 있었다.

  • In this work, I propose a temperature stable voltage-to-frequency converter in which the output frequency is directly proportional to the input voltage. The output frequency range is from 20㎑ to 60㎑ and the difference between simulated and calculated values is less than about 5% for this range of output frequency. The temperature variation of sample output frequencies is less than ${\pm}$0.5% in the temperature range -25$^{\circ}C$ to 75$^{\circ}C$.

냉동저장동안 풋콩의 품질에 영향을 미치는 Blanching 조건 (Effects of Blanching Conditions on the Quality of Immatured Soybeans during Frozen Storage)

  • Blanching conditions for immatured soybeans were optimized by analyzing the effects of various time/temperature blanch treatment on the activities of peroxidase and lipoxygenase, the stability of vitamin C and color, and moisture content in immatured soybeans for the purpose of minimizing quality deterioration during frozen storage. Blanching at 96$^{\circ}C$ for 70 sec led to maximum inactivation of lipoxygenase in the immatured soybeans, while my blanching conditions tested in this study were not enough to inactivate peroxidase. Blanching at 82$^{\circ}C$ for 60 sec resulted in the highest amount of vitamin C remaining in the immatured soybeans after blanching. Hunter -a/b ratios of immatured soybeans blanched at 82$^{\circ}C$ for 60 sec and hue values (ΔE) of the immatured soybeans blanched at 76$^{\circ}C$ for 60 sec showed the closest values to those of fresh products. The changes in moisture content of immatures soybeans was not so significant after blanching. In conclusion, it was suggested that immatured soybeans be blanched at 96$^{\circ}C$ for 70 sec to minimize lipoxygenase activity and resulting quality deterioration, while blanching at 82$^{\circ}C$ for 60 sec was recommended to stabilize vitamin C and color.

무극 금은 광상에 대한 유체포유물 및 안정동위원소 분석연구 (Stable Isotope and Fluid Inclusion Studies of the Mugug Au-Ag Mineral Deposits)

  • A couple of Au-Ag-bearing epithermal quartz veins of Cretaceous(87.9Ma) in age are developed in the Cretaceous(112Ma) granodiorite batholith which was emplaced in Mesozoic Baegyari sedimentary formation. Au minerals consist mostly of electrum with a 54.2-61.9 wt% Au and are closely associated with sulfide minerals including pyrite, chalcopyrite, pyrrhotite, galena and sphalerite. Homogenization temperatures of fluid inclusions in quartz, fluorite and calcite are $196-368^{\circ}C$ (avg. $240^{\circ}C$), $74-176^{\circ}C$ (avg. $115^{\circ}C$) and $75-200^{\circ}C$ (avg. $119^{\circ}C$) respectively. Sulfur isotopic compositions( +5- +8‰) of ore sulfides indicate a deep-seated sulfur origin. Oxygen isotope compositions of different stages of quartz vary from +5.6 to +9.3‰ and calculated ${\delta}^{18}O$ values of ore fluid at $250^{\circ}C$ range from -3.2 to +0.4‰, reflecting an isotopically evolved ore fluid mixed with a $^{18}O$ depleted meteoric water under the variable mixing ratios between hydrothermal and meteoric waters. Isotopic data of calcite minerals support the above conclusions.

Fe-30%Mn-6% Si 합금의 형상기억효과에 미치는 Training(SIM↔γ)의 영향 (Effect of Training( SIM↔γ) on Shape Memory Effect of Fe-30%Mn-6%Si Alloy)

  • Five alloys were selected randomly in the composition range showing the best shape memory effect in Fe-Mn-Si system reported by Murakami. The shape memory effects of those alloys were mainly investigated through the training treatment which consisted of the repetition of 2% tensile deformation at room temperature and subsequent annealing at $600^{\circ}C$ above $A_r$ temperature. At the same deformation degress in rolling $600^{\circ}C$-annealing for 1 hr. showed the best shape memory effect, and 10%-deformation degrees represented maxima of the shpae memory effects at all annealing temperatures, $500^{\circ}C$, $600^{\circ}C$ and $700^{\circ}C$. The shape memory effects of the alloys were increased by increasing training cycle up to 5 cycles. This was because a large number of dislocations introduced by training process gave rise to increase in the austenite yield stress, and acted as nucleation sites for stress induced ${\varepsilon}$ martensite. The thermal cycling treatment, repetition of cooling in nitrogen at $-196{\circ}C$ and heating to $300^{\circ}C$ for 5 min., did not improve the shape memory effect.

모의실험을 통한 편의점 판매용 김밥 도시락의 유통기한 예측 (The Predicton of the Shelf-life of Packaged Meals (Kim Pab) Marketed in Covenience Stores Using Simulation Study)

  • Based on microbiological-chemical test results under simulated time-temperature conditions, total plate count, coliform, and volatile basic nitrogen were selected as effective quality indicators for estimating probable shelf-life on Kim Pab dosirak marketed in convenience stores, and shelf-life at each storage temperature was calculated from regression equation between effective quality indicator standard limit and storage time. Estimated shelf lives of Kim Pab Dosirak were 17, 3 and 2 hours respectively under 1$0^{\circ}C$, 2$0^{\circ}C$ and 3$0^{\circ}C$. Because shelf-life was especially affected by intial values, regression analysis between initial effective quality indicator values and storage hours was performed for the estimation of probable shelf-life on Kim Pab during storage at 10, 20, or 3$0^{\circ}C$.

  • This paper is concerned with the improvement of impact and tensile Properties of spheroidal graphite cast iron of the following duplex matricess which were heat treated in the eutectic transformation temperature range (that is, $({\alpha}+{\gamma})$ coexisting range) ; ferrite-martensite, ferrite-bainite and ferrite-pearlite. The absorbed energy and maximum load was measured by recording the load-deflection curve with instrumented Charpy impact testing machine in the temperature range from $+100^{\circ}C$ to $-196^{\circ}C$. It was found the ferrite-bainite duplex matrix showed the highest toughness among the above matrices in the room temperature and the low temperature range. Comparison of this matrix to ferrite-pearlite matrix(that is, as cast) showed a lowering of $27^{\circ}C$ in the nil-ductility transition temperature (NDT) and a lowering of $40^{\circ}C$ in the ductile-brittle transition temperature (TrE), Which seems to result from the finner dimple pattern observed using miorofractography.
