Quality Characteristics of the Hamburger Patties with Bamboo (Sasa borealis) Leaf Extract with/without Cooked Rice

조릿대 잎 추출물과 밥을 이용한 햄버거 패티의 품질 특성

Abstract

This study was conducted to develop patties by substituting a portion of meat by bamboo (Sasa borealis) leaf extract (SBE) and/or cooked rice. Four types of patty were prepared: Control, S, SI, and SII. S was the patty for which 2.5% of meat was substituted with SBE. SI and SII were the patties with 25% or 50%, of meat, respectively, substituted with cooked rice containing SBE. The moisture contents of S, SI, and SII patties were not changed. The compositions of fat, cholesterol, and protein of S, SI, and SII patties were decreased. Cooking loss of weight as well as the diameters of S, SI, and SII patties were decreased. pH was increased in S patty, hardness was reduced in SI and SII patties, and malondialdehyde values were lowered in S, SI, and SII patties, compared to control. The S, SI, and SII patties were evaluated higher for color in sensory tests and preference tests. Through preference tests of burgers with these patties, the overall taste of the SI patty was assessed highly among the 4 patties. Therefore, it may be concluded that developing a patty by substituting a portion of meat with SBE and/or cooked rice may be worthwhile.

본 연구에서는 패티 재료의 육류 일부를 SBE 또는 SBE-밥으로 대체하여 건강지향적인 기능성 패티의 개발 가능성을 알아보고자 하였다. 시제품 패티 3종을 제작하여 이들의 품질 특성과 관능성 및 기호도를 전형적인 표준 패티(Control)와 비교 평가하였다. 시제품 패티는 SBE로 육류의 2.5%를 대체한 것(S)과 SBE-밥으로 육류의 25%(SI) 또는 50%를 대체한 것(SII)이었다. Control 패티에 비해 S, SI 및 SII 패티 모두 수분 함량은 다르지 않았다. 그러나 탄수화물과 조회분 및 Na 함량은 높았고 반면에 지방과 콜레스테롤 및 단백질 함량은 낮았다. 회분과 Na 함량의 증가는 특히 S 패티에서 컸고, 탄수화물의 증가와 지방, 콜레스테롤 및 단백질 함량의 저하는 SI과 SII 패티에서 상당했다. 가열 감소율은 중량, 직경 및 두께 모두에 네 패티 간에 유의적인 차이를 보였는 바, S 패티는 Control 패티에 비해 직경 감소율이 낮았고, SI 패티는 중량과 직경 감소율이 낮았으며, SII 패티는 중량과 직경 감소율이 낮은 반면에 두께 감소율은 컸다. 색도는 S, SI 및 SII 패티 모두 Control 패티에 비해 명도(L)는 낮았으나, 황색도(b)가 높았으며, S 패티의 경우는 적색도(a)도 높았다. pH는 Control 패티에 비해 SI 패티는 동일했으나, S 패티는 높았고, 반면에 SII 패티는 낮았다. 경도는 S 패티는 Control 패티와 같았으나, SI 패티는 낮았고, SII 패티는 더 낮았다. MDA 값은 SII, SI 및 S 패티 순으로 낮았다. 패티의 관능성은 Control 패티에 비해 S, SI 및 SII 패티 모두 색이 좋게 평가되었으며, SI과 SII 패티는 윤기도 높게 평가되었고, 기타 관능성 항목에서는 네 패티 간에 차이를 보이지 않았다. 기호도 조사에서는 Control 패티에 비해 S, SI 및 SII 패티 모두 색은 좋게 평가되었으나, SII 패티는 윤기는 높으나 경도가 낮게, S와 SII 패티는 느끼함과 이취가 낮게, S 패티는 고소함이 낮게, 그리고 맛은 S와 SI 및 SII 패티 모두 낮게 평가되어, S와 SII 패티는 전체적인 기호도가 낮았다. 한편, 이들 패티를 이용하여 제작한 햄버거의 기호도는 Control 패티에 비해 S 패티는 이취와 고소함, 맛 및 전체적인 기호도에서 낮은 평가를 받았으나 SI 패티는 가장 우수하다고 평가되었다. 이는 SI 패티의 SBE 함량이 S와 SII 패티의 절반 수준이었고 SBE-밥의 함량은 SII 패티의 절반이었던 점이 이취가 강하지 않았고 경도의 저하 또한 크지 않았기 때문이라 해석된다. 이와 같은 본 연구결과는 패티 재료의 육류 일부를 SBE 또는 SBE-밥으로 대체할 경우 패티의 수분 함량이나 경도 및 pH에 큰 변화가 없고, 색이 향상되며, 지질산패도가 낮은 우수한 품질 특성을 갖게 되고 또한 가열감소율이 적은 장점을 갖는다는 점과 함께 관능성과 기호도 또한 나빠지지 않음을 확인해 주었다. 그러므로 SBE에 들어있는 생리활성물질을 함유하는 저에너지, 저지방 및 저콜레스테롤의 건강지향적인 기능성 패티의 개발 가능성이 크다고 결론 내릴 수 있겠다.
