양식산 은어의 품질 향상을 위한 연구의 일환으로 섬진강과 밀양강에서 채포된 천연산과 하동과 밀양 소재의 양식장에서 구임한 양식산 은어의 근육 및 난에 대하여 일반성분 조성을 분석, 비교한 결과는 다음과 같다. 천연산 은어 근육의 수분함량은
