Food Constituents of Edible Ascidians Halocynthia roretzi and Pyura michaelseni
양식 및 천연산 우렁쉥이의 식품성분

Abstract
The food components of three kinds of edible ascidians being cultivated and caught in Tongyeong and Jisepo districts, Kyongnam of Korea were investigated. Wild Halocynthia roretzi (WM) and Pyura michaelseni (DM) were higher in contents of moisture and crude protein than cultured Halocynthia roretzi (CM). Total combined amino acid contents of CM, WM and DM muscles were 11,425.4 mg%, 11,595.4 mg% and 12,152.7 mg%, respectively, and major amino acids were Asp, Glu and Lys. The major fatty acids were 14:0, 16:0, 16:1n7, 18:1n7, 18:4n3, 20:5n3 and 22:6n3, and composition ratio of n3 polyunsaturated fatty acids of CM, WM and DM were 39.1%, 47.0% and 46.5%, respectively. In extracts components, total free amino acid contents of CM, WM and DM were 1,071.3 mg%, 1,278.7 mg% and 1,133.2 mg%, respectively, and the major amino acids were Tau, Glu, Pro, Asn, Gly, and Ala, while Arg was contained little quantities. As for nucleotides and related compounds, AMP was the principal component and IMP was detected though very small amounts in ascidian samples. 우리나라에서 생선회와 더불어 즐겨 먹고 있는 수산식품인 멍게류의 식품성분 특성을 분석하여 수산화학적 측면에서 비교 검토하였다. 수분과 조단백질 함량은 돌멍게와 천연산 우렁쉥이가 양식산에 비해 다소 많았으며, 양식산 우렁쉥이는 글리코겐의 함량이 다소 많았다. 양식산 및 천연산우렁쉥이, 돌멍게의 구성아미노산의 총함량은 각각 11,425.4 mg%, 11,593.4 mg% 및 12,152.7 mg%이었고, Asp, Glu 및 Lys 등이 주요 구성아미노산이었다. 양식산 및 천연간 우렁쉥이, 돌멍게 총지방질의 주요구성지방산은 14:0. 16:0, 16:1n7, 18:1n9, 18:1n7, 18:4n3, 20:5n3 및 22:6n3 등이었고, n3계열 고도불포화 지방산의 조성비는 각각 39.1%, 47.0% 및 46.5%이었다. 정미성분의 조성에서 양식산 및 천연산 우렁쉥이, 돌멍게에 함유된 유리아미노산의 총량은 각각 1,071.3 mg%, 1,278.7 mg% 및 1,133.2 mg%으로 천연산 쪽의 함량이 가장 많았으며, 각 시료 모두 Tau, Glu 및 Pro의 함량이 월등히 많았고, 다음이 Asn, Gly, Ala 등으로 이들이 전체의
