약주(藥酒) 향기성분(香氣成分)의 역치와 쾌감도(快感度)

초록

약주(藥酒)의 향기성분(香氣成分)인 formaldehyde, acetaldehyde, ethyl acetate, acetone, diacetyl, n-propanol, iso-butanol, iso-amyl alcohol, dimethylsulfide, ethanol의 역치를 유사(類似) 약주(藥酒)와 18% ethanol 액(液) 및 $20^{\circ}C$$50^{\circ}C$의 증류수중에서 측정(測定)하고 이들 성분(成分)의 각농도(各濃度)에서의 쾌감도(快感度)를 측정(測定)하였다. 유사약주(類似藥酒)에서의 역치는 각각 5,20,30,7,0.2,20,80,10,2ppm 및 5g/l이었으며 $20^{\circ}C$ 증류수중에서의 역치는 각각(各各) 5,10,20,7,0.15,75,7.5,2ppm 및 5g/l 이었고 iso-amyl alcohol은 $80{\sim}350ppm$에서 최고 쾌감(快感)을 나타낸 후 520ppm 이상에선 불쾌감(不快感)을 나타냈다. Ethanol은 $10^5ppm$, n-propanol은 50ppm까지는 쾌감(快感)을 나타냈으며 iso-butanol은 220ppm, diacetyl은 1ppm을 초과하면 불쾌감(不快感)을 나타냈으며 iso-butanol은 260ppm 초과의 경우 극도의 불쾌감(不快感)을 나타냈다. Ethyl acetate는 함량(含量)이 증가함에 따라 쾌감(快感)이 좋았으나 250ppm이 초과하면 쾌감(快感)이 감소(感少)하는 경향이었으며 acetaldehyde는 110ppm에서 최고(最高) 쾌감(快感)을 보였다.

The odor threshold and agreeability of aroma components in Korean Yakju were measured in Null-Yakju, 19% ethyl alcohol solution, $20^{\circ}C$ distilled water and $50^{\circ}C$ distilled water by 20 panels. The measurement of the odor threshold in Null-Yakju was as follows: Formal-dehyde 5ppm, acetaldehyde 20ppm, ethylacetate 30ppm, ethyl alcohol 5g/l, acetone 7ppm, diacetyl 0.2ppm, n-propanol 20ppm, iso-butanol 80ppm, iso-amyl alcohol 10ppm and dimethyl sulfide 2ppm were found. The most agreeability of amyl alcohol, ethyl alcohol and acetaldehyde were $80{\sim}350ppm$, $2.6{\times}10^4{\sim}1{\times}10^5ppm$ and $75{\sim}160ppm$.
