Effect of Harvesting Time on the Quality of Malting Barley

맥주맥(麥酒麥)의 수확시기(收穫時期)가 원맥품질(原麥品質)에 미치는 영향(影響)

In order to determine the optimum harvesting time based on grain filling and physico-chemical qualities for malting, three cultivars were harvested at every five days from 30th day after heading date at two experimental sites in the southern part of Korea. Starch accumulation and kernel weight increment were remarkable until 45th day after heading, but negligible after that. Content of ash, crude protein and polyphenolics and ${\alpha}-amylase$ activity decreased with maturation of grains and reached to the lowest value at 45th day after heading date. Germinative energy and capacity were good enough for malting from 40th day after heading date. The optimum harvesting time were estimated at 45th day after heading date in the increment of starch accumulation and kernel weight. At this time matured and immatured kernels were in the ratio 93 : 7. However, it is estimated that early harvesting time was at 40th day after heading date.

맥주맥(麥酒麥)의 등숙정도(登熟程度)에 따른 중요(重要)한 품질변화(品質變化)를 조사(調査)하여 수확적기(收穫適期)을 구명(究明)하고자 삼품종(三品種)을 공시(供試)하여 출수기(出穗期) 30일부터 5일 간격(間隔)으로 50일까지 수확(收穫)한 원맥(原麥)의 품질(品質)들을 분석(分析) 비교(比較) 검토(檢討) 하였다. 전분(澱粉), 천립중(千粒重), ${\beta}-glucan$ 및 점도등(粘度等)은 출수기후(出穗期後) 45일까지는 현저한 증가(增加)가 있었으나 45일 이후(以後)는 천립중(千粒重)과 전분등(澱粉等)은 증가(增加)되지 않고 ${\beta}-glucan$ 및 점도등(粘度等)은 크게 감소(減少)되었으며 회분(灰分), 단백질(蛋白質), Poly Phenolics 및 ${\alpha}-amylase$ activity등(等)은 수확시기(收穫時期)가 늦어짐에 따라 감소(減少)되는 경향(傾向)이나 출수기(出穗期) 45일 이후(以後)의 수확시기(收穫時期)에서는 유의성(有意性) 있는 증가(增加) 또는 감소(減少)가 없는 최소치(最少値)가 되었고 발아세(發芽勢), 발아율(發芽率)및 수감수성등(水減受性等)은 등숙초기(登熟初期)의 현저한 향상(向上)으로 출수기후(出穗期後) 40일이면 제맥(製麥)에 영향(影響)을 주지않을 정도(程度)로 양호(良好)하였으나 수감수성(水感受性) 정도(程度)는 전수확시기간(全收穫時期間)에 고도(高度)의 유의차이(有意差異)가 있고 오히려 늦은 수확시기(收穫時期)에서는 품질(品質)이 불량(不良)해 지는것으로 판단(判斷)되었다. 완전입율(完全粒率)은 늦은 수확시기(收穫時期)까지도 향상(向上)되어 수량(收量)에 다소간(多少間) 기여될것으로 생각되나 천립량(千粒量)과 전분함량(澱粉含量)이 최대(最大)가 되는 동시(同時)에 양적(量的) 제한품질(制限品質)들은 최소(最少)가 되며 완전립(完全粒)과 불완전립(不完全粒) 비율(比率)이 93:7정도(程度)가 되는 출수기후(出穗期後) 45일이 수확적기(收穫適期)로 판단(判斷)되었고 조기수확(早期收穫) 한계기(限界期)는 천립중(千粒重)이 35gr. 정도(程度)가 되는 40일로 추정(推定)되었다.
